All of our Scottish bacon is cured in Ayrshire of Scottish pork. Sold rindless, our bacon is proper bacon that doesn’t evaporate in the pan or leave a white trail as it cooks. Middle bacon, especially Ayrshire (the undisputed champion of middle bacon) is the classic breakfast bacon. You get the leaner, tender meat of the back but with all the fat and flavour of the streaky bit. Grilled or pan-fried just how you like it, it needs nothing more than the creamy yolk of a few perfectly fried eggs to match the savoury salt flavours stride for stride. No mushrooms, hash browns, beans or other such breakfasting nonsense. Just bacon. And eggs.
