Cooking Tips

Low and slow is the best way with a beef olive. Preheat the oven to 180C and heat a frying pan over medium heat with a spray of olive oil. Brown the beef olives on all sides for about 5 minutes then place in a shallow baking dish. Add about 150ml of beef stock (a cube is fine) with some chopped carrot and onion and cover with foil. Bake for about 45 minutes until the meat is tender. Alternatively, follow the above but instead of stock add a jar of low-fat pasta sauce. Cover and bake as described.
