Skinni Italian Butterfly Chicken Caesar Salad

Our Skinni Italian butterfly chicken steaks are ideal for the barbecue, served with just a salad and a baked potato.  1 Pack Skinni Italian Butterfly Chicken Breasts
 1 Small Romaine Lettuce
 1 Small Pack Sunbite Wholegrain Crackers
 4 Anchovy Fillets
 4 tbsp 0% Fat Creme Fraiche
 1 Garlic Clove
 20 g Parmesan - Grated

Wash the lettuce thoroughly and tear it into large-ish pieces. Dry, and place in a salad bowl.

Grill the chicken for 3 to 5 minutes on each side, or until just cooked through. Slice.

Bring a small pan of water to the boil and drop the garlic clove into it for 1 minute. This blanches it and takes away some of the raw bite.

Blitz the ingredients for the dressing until smooth.

Toss the lettuce in the dressing, add the chicken pieces, and scatter with the crushed crackers.

Eat immediately.
