In this summery Skinni recipe, we have served Skinni beef kebabs straight from the BBQ with a chunky Greek salad, fat-free tzatziki, and a diet-friendly bread option to keep it real. You could of course skip the bread and go naked should the desire take you. Use Total or Liberte fat-free plain yoghurt as they both keep their creamy texture well.
Heat the grill, or light the BBQ.
Grate the cucumber, leave aside for a few minutes, and then squeeze between your hands so that all of the liquid is drained away.
Mix this cucumber together with the rest of the tzatziki ingredients.
Mix the salad ingredients.
Mix the dressing ingredients.
Dress the salad.
Grill the kebabs for about 5 minutes on each side.
Toast the sandwich thins and split apart.
Serve the salad and kebabs over the bread, and eat with the tzatziki.
