Be still our beating hearts; it's stovies, Skinni style.
A Scottish classic, made the west coast way with square sausage. We have used our popular Skinni slice to cut the fat and the calories but none of the taste.
You can use any kind of beef stock that you like; we used a good old Oxo cube.
Heat the oil in a frying pan and cook the onion until soft and beginning to brown.
Add the Skinni slice and brown on either side.
Chop the Skinni slice into cubes and place in a saucepan with the onions, potato, carrot and stock. Season with a pinch of salt.
Bring the pan to the boil, turn down the heat, and simmer gently for 30 minutes with the lid on.
Remove the lid for the final 15 minutes of cooking. The potato will be soft and the gravy thickened.
Serve hot with optional oatcakes, pickled beetroot, and a mug of builders tea. Yum.
